Terrain:Chalky-limestone soils, hills located at 560 meters above sea level.
Maturation: The hand-harvested grapes undergo a light maceration for two hours after an initial pressing. Fermentation occurs spontaneously with native yeasts in stainless steel, with no temperature control and no filtration. The wine is then aged in the bottle for one month.
