  • Description: Salgemma was the first label produced by Sergio, the wine that represents him the most. A pure Nero d’Avola, electric and resolute—a true mountain wine. Its name comes from the glimmering rock salt spires that shine under the sun, evoking a sense of something precious and adding even more allure to a territory waiting to be discovered.
  • Grapes: Nero d'Avola 
  • Terrain: Chalky-limestone soils, hills located at an altitude of 540-600 meters above sea level.
  • Maturation: The hand-harvested grapes, after pressing, undergo spontaneous fermentation with only native yeasts, without any temperature control. The wine is aged for two months in fiberglass tanks and tonneaux, with no filtration. It then matures in the bottle for three months.
