Maturation: The hand-harvested grapes undergo a light maceration for a few hours after an initial pressing. Fermentation occurs spontaneously with native yeasts in stainless steel, followed by one month in oak barriques. No temperature control is applied, and the wine is unfiltered. It is then aged in the bottle for three months.
