ETNA ROSSO

  • Denomination: Etna rosso DOC
  • Description: It has a strong backbone intertwined with fruity notes, aromatic herbs, and underbrush, making it rich and intriguing.
  • Grape: Nerello mascalese
  • Soil: Vineyard located in the contrade of bardazzi and montedolce between 550 and 850 meters above sea level
  • Aging: The grapes are destemmed and crushed using a small destemmer, followed by maceration in small open-top vats. Fermentation is spontaneous, and maceration lasts between 14 and 21 days, with daily manual punch-downs and pump-overs. The pomace is pressed with a manual basket press, and malolactic fermentation occurs naturally. Blending and aging take place in small concrete containers, with a small portion in neutral wood. The wine then rests for 12 months in the bottle before release.
