Soil: A small vineyard, with clay-rich valley floor soil mixed with volcanic sands that have rained down from the sky over the centuries.
Aging: Destemming and crushing, maceration with spontaneous fermentation. Blending of the three different harvests. Maceration in open-top vats for 9 to 12 days. Aging in glass demijohns and a small fiberglass container.
