Description: The sparkling wine with sediment is playful yet intense and lively, fresh with the right fruit, salty, and savory.
Grape: Nerello Mascalese and other white and red grape varieties
Soil: Contrada Montedolce and Contrada Boccadorzo, at higher altitudes, on the northern side of Etna. The ripening process is slower here, with mountain-grown grapes. The vineyards are mixed, featuring Nerello alongside many Italian and French varieties, or as I like to say, Mediterranean varieties.
Aging: Bottle refermentation with must, fine lees, and small cellar techniques based on experience. The wine undergoes 2.5 to 3.5 atmospheres of pressure.
